How to Make Homemade Healthy Pasta

Eggless Pasta Dough
Though most supermarkets have eggless pasta available, most fresh pasta dough requires the use of eggs. If you prefer to leave eggs out of this recipe, there is an easy way to avoid this. All you need is flour, semolina flour, water, and salt. Mix the ingredients the together in a bowl and wrap it in foil. Let the mixture chill for a half hour in the fridge before running through the pasta machine.
Vegetable Pasta
Vegetable pasta is a little more complicated to make than eggless pasta but just as delicious! Here are a few ingredients that you’re going to need.
Ingredient Checklist
- 6 ounces carrots (3 to 4 medium), peeled and cut into 1-inch pieces
- 2 large eggs
- 1 large egg yolk
- 2 1/2 cups all-purpose flour, plus more for dusting
- Coarse salt
- Semolina flour, for storage
Step 1:
Boil carrots or vegetables in 2 inches of water in a medium saucepan. Simmer for about 10 mins or until tender. Puree vegetables in a food processor.
Step 2:
Add eggs and yolk to the food processor. Combine flour with salt and process until liquid is together.
Step 3:
Transfer dough to a well-floured surface. Knead until smooth and elastic, 5 to 10 minutes, adding up to 2 tablespoons flour if dough is too sticky. Place on a piece of parchment, and cover with an inverted bowl, or wrap tightly in plastic; let rest for 1 to 2 hours.
